Creamy Dill Sauce


Ingredients: 
  • 1/2 cup raw cashews soaked in hot water for 60 minutes. 
  • 1/2 cup unsweetened plant based milk. I used soy. 
  • 1/3 - 1/2 cup of fresh chopped dill. Depends on how much you love dill. 
  • 1 TBSP minced garlic
  • 1 TBSP apple cider vinegar 
  • Freshly squeezed/pressed juice from 1/4 of a lemon. 
Instructions: 

Drain water from cashews once they are done soaking. Add all ingredients to a high powered hand held blender or food processor and blend until smooth. 

Perfect for a pasta or potato salad, as a dip for fresh cut veggies or freshly baked french fries, tossed in a salad or on a sandwich. Whatever way you choose to use this sauce, I hope you really enjoy it! Dilly, dilly!!
