Creamy Dill Alfredo Pasta
By far my one of my favorite Vegan pasta dishes that I've made. How to make? Here are the details:
In a pot add the following ingredients;
- 1 can of coconut milk
- 1/2 cup of veggie broth (add 1/4 cup in the beginning and then the other half as it starts to thicken).
- 1/4 to 1/2 cup of fresh chopped dill. All depends on how obsessed you are with dill. I say the more, the better.
- 2 tsp's of garlic powder
- 2 tsp's of onion powder
- Pinch of salt
- Dash of pepper
Stir in all ingredients with a whisk on medium to low heat (depending on your stove). It takes approximately 15 - 20 minutes, but it should start to thicken. I like to consistently stir it with the whisk as it's cooking, but that's just me.
In a separate pot, add water, bring to a boil, add pasta and boil for 10 - 13 minutes depending on the type of pasta that you're using. It's always a great idea to check the pasta package for cooking instructions.
Once all is done, mix everything together and serve on a plate or in a bowl. Some options would be to sprinkle nutritional yeast, add some extra dill for decorative purposes, mix in or pile high with sautéed garlic mushrooms and/or broccoli and then serve with a lemon wedge.
