Step One:
Set oven to 375 F.
Step Two: Bowl 1 - Wet Ingredients:
- 2 mashed medium sized bananas
- 3 TBSP soy milk
- 1 TBSP molasses or maple syrup, your choice. I used molasses.
- 2 tsp's of real vanilla extract
Mix all of the above ingredients together.
Step Three: Bowl 2 - Dry Ingredients:
- 1 cup all purpose white flour
- 1/4 cup date sugar. Brown or coconut sugar will do too.
- 1 1/4 tsp baking powder
- 1 tsp cinnamon
- 1/4 tsp salt
- 1/8 tsp baking soda
Combine all of the above ingredients together. Mix to distribute all dry ingredients so that they are evenly distributed amongst each other.
Combine bowl 1 & bowl 2 and mix together. A few bumps here and there are ok. You don't want muffin batter to be perfectly smooth.
Step Four: Other ingredients to fold in once bowl 1 & 2 have been combined:
- 1/8 cup vegan chocolate chips
- 1/8 cup crushed walnuts
Use a silicone muffin pan or muffin liners. You can also lightly grease the muffin tin with a little bit of vegan butter or oil. Your choice!
And I know I said oil free, but it's just a tad bit on the muffin tin. If you want to keep it oil free just use muffin liners or if you trust your silicone muffin pan, go for it! 😁😁
Normally I would say to only fill up 3/4 of the way; however, I almost filled these to the brim! Why not? Go big or go home!
Before putting the muffins in the oven use 1/8 cup of crushed walnuts to distribute over each muffin.
Cook for 23 minutes. Rotate pan in the oven at 12 minutes for evenly distributed baking.
This makes 6 muffins.
