Shiitake Bacun' - 3 Ways


Main Ingredient: 

  • 1 cup of shiitake mushrooms per marinade 

Remove stems, wash and cut each one in half from top to bottom, lengthwise, to maintain circular shape. I only did this for the thicker ones; the thinner ones I left whole. 


There were 3 different marinades that I used; spicy, "honey" garlic and mesquite maple. 


**The liquid smoke which is listed for all of them is completely optional. If you don't have it or don't like the taste, feel free to omit from recipe.**


Spicy Marinade: 

  • 2 TBSP olive oil 
  • 1 TBSP white vinegar
  • 1/2 TBSP molasses 
  • 2 tsp's minced garlic 
  • 1 tsp brown sugar
  • 1/2 tsp onion powder 
  • 1/4 tsp smoked paprika 
  • 1/4 tsp salt 
  • 1/8 tsp cayenne 
  • **1/8 - 1/4 tsp liquid smoke 

"Honey" Garlic Marinade: 

  • 2 TBSP olive oil 
  • 1 TBSP minced garlic 
  • 1/2 TBSP agave 
  • 2 tsp's balsamic reduction
  • 1 tsp apple cider vinegar  
  • 1 tsp brown sugar
  • 1/2 tsp onion powder 
  • 1/2 tsp garlic powder 
  • 1/4 tsp salt 
  • **1/8 - 1/4 tsp liquid smoke

Mesquite Maple Marinade: 

  • 2 TBSP olive oil 
  • 1 TBSP minced garlic 
  • 1/2 TBSP maple syrup
  • 2 tsp's balsamic reduction
  • 1 tsp brown sugar
  • 1 tsp apple cider vinegar 
  • 1/2 tsp paprika 
  • 1/2 tsp onion powder 
  • 1/4 tsp salt 
  • **1/8 - 1/4 tsp liquid smoke

**Optional ingredients. 


Combine all ingredients for marinade in a Tupperware container and mix in mushrooms. Make sure each mushroom piece is covered back to front with marinade. Let sit overnight. 


In the morning when you're ready to prepare your breakfast, set oven to 350 F. 


Start placing each mushroom piece on a silicone mat that has been placed on a baking sheet. Do not lay the mushroom pieces over top of one another. They need their space to do their thing. 


Cook for 10 minutes. Take out of oven and flip each piece to cook for an additional 15 minutes. Take out of oven and turn heat up to 375 F to cook for an additional 10 - 12 minutes. At this point it'll be crispy, but still spongy towards the centre. 


Serve immediately.
