These were so random as I literally just threw whatever I thought would taste good in a bar, into my food processor and blended away! I totally guesstimated the amount of each ingredient, but here is an approximate amount of each ingredient: 
- 3/4 raw, unsalted peanuts
 - 1/2 cup of raw walnuts
 - 1/2 cup dried cranberries
 - 1/3 cup shredded coconut
 - 1/3 cup of dates
 - 1/4 cup of Oatmeal (forgot to add in when I originally posted. Oops!)
 - 1/4 cup of maple syrup
 - 1/8 cup water
 
First step is to soak dates in warm water for approximately 10 minutes. Once dates are done soaking, throw all ingredients in food processor and blend away. Once satisfied with how the ingredients are blended, take the delish mix out of the food processor and put in small to medium square baking glass. Pat down to form squares that are 3/4 - 1 inch thick in width. Cover with plastic wrap and refrigerate for 45 - 60 minutes. 
Once done setting in fridge, take out and cut into as many squares as you'd like. Then melt Vegan chocolate chips in a bowl with 2 tsp's coconut oil. Once melted, be careful to dip the top of each bar in the melted chocolate. Repeat chocolate dipping for each one. 
Refrigerate for 30 - 45 minutes. Take out, enjoy a few and cover the baking sheet with a lid or plastic wrap and put back into fridge for later. 
I find melting coconut oil with the chocolate chips gives it an extra bit of shine. 
If you made too much chocolate, I suggest that chocolate dipped strawberries would be a wise idea. Just saying! 🙂
