This is my 3rd or 4th pancake recipe on my blog, but what can I say? I love pancakes and they're extremely easy to make from scratch. They're also incredibly versatile when it comes to both the batter and the toppings. The pancake-abilities are endless! I hope you enjoy the recipe. Leave a comment and let me know what you think. 😁
Pancake Batter:
- 1 1/8 cup of oat flour (I ground my own oats in a blender)
- 4 tsp's of coconut sugar
- 2 tsp baking powder
- 1 tsp cinnamon
- 1 cup soy milk
- 1 banana, mashed
Put all the dry ingredients in a bowl followed by the wet ingredients. Mix batter until everything combined.
Date Sauce;
- 1/2 of a cup of pitted dates (soak for 10 minutes in hot water)
- 1/4 of a cup hot water (this is separate from the water mentioned above)
- 2 TBSP crushed walnuts
- 1/2 TBSP molasses
- 1/4 tsp cinnamon
- 1/8 tsp of pumpkin spice
All of the above ingredients go into a food processor until blended smooth.
The above for the batter and date sauce makes 2 servings.
To cook, put 1 tsp of vegan butter in a frying pan and warm up on medium heat. Once Vegan butter is melted, scoop out 1/4 cup of the batter and cook each side for 2 - 3 minutes on medium to low heat. You'll know when you need to flip the pancake once bubbles start to form at the top throughout the surface of the pancake. If you're cooking in a large frying pan, feel free to make 2 pancakes at a time.
Once all pancakes are done put on a plate and top with date sauce, crushed walnuts and sliced bananas. If you don't want to make the date sauce, maple syrup will taste just fine. 🙂
