Rocky Road cookies for the win!! These are hands down, my most favourite cookies that I've baked so far in my blogging journey. They win big in both texture & taste and are perfectly crumbly in all the right spots.
Before I get into the instructions per step, I'm going to give you a full list of the ingredients first, just so you can check it out prior to reading all the steps.
Ingredients are;
- 1/4 cup coconut oil
- 1 cup date sugar
- 2 cups flour (I used basic white flour)
- 2 tsp baking powder
- 2 tsp baking soda
- 1/2 cup soy milk
- 1/4 cup maple syrup
- 2 tsp vanilla
- 1/4 cup chopped walnuts
- 1/4 cup chocolate chips
- 36 dandies mini vanilla marshmallows
Baking starts now! Go!
Step 1:
- 1/4 cup coconut oil
- 1 cup date sugar
Mix the sugar and oil together. It will get a bit crumbly. If you don't have date sugar, either coconut or brown sugar will do.
Step 2:
- 2 cups flour
Add flour the the above mix. Get in there and mix all ingredients together.
Step 3:
- 2 tsp baking powder
- 2 tsp baking soda
Add the remaining dry ingredients and distribute it throughout the mix.
Step 4:
- 1/2 cup soy milk
- 1/4 cup maple syrup
- 2 tsp vanilla
Add wet ingredients and mix everything all together. I used my hands to lightly push into the dough & distribute all items as one.
Step 5:
- 1/4 cup chopped walnuts
- 1/4 cup chocolate chips
- 36 dandies mini vanilla marshmallows
Push all of the above ingredients into dough and distribute throughout the batter.
Step 6:
Form the dough into a log and cut width wise to make the desired amount of cookies you want to bake.
Step 7:
Bake on a silicone baking mat or parchment paper placed on top of a baking tray or bake on a lightly greased pan.
Baking time is 12 minutes at 350 F
This makes anywhere from 12 - 15 cookies.
