Creamy Mushroom Soup with Orzo


If you like creamy mushroom soup with chives, mushrooms, garlic and orzo; this soup is a must try! I do have another more traditional cream of mushroom soup posted on my blog, but this is for those like myself, that enjoy hearty soups. It was super easy to make too, which is a bonus if you're a busy body. Hopefully you enjoy it! 


Ingredients for Step 1: 

  • 3 cups of sliced mushrooms 
  • 1/2 cup of veggie broth 
  • 1 TBSP vegan butter (optional)

Instructions for Step 1: 


Cook mushrooms in a pan with veggie broth and vegan butter until softened. 


Ingredients for Step 2: 

  • 2 cans of coconut milk 
  • 250 ml of veggie broth 
  • 5 cloves of garlic, minced 
  • 2 TBSP dehydrated chives 
  • 1/2 TBSP onion powder 
  • 1/2 TBSP celery salt 
  • 1 tsp arrowroot starch (for slight thickening)
  • 1/8 tsp pepper 

Instructions for Step 2: 


Add all ingredients above to a large pot or slow cooker. Whisk until all ingredients are combined together. 


Final Instructions: 


Once mushrooms are cooked add to slow cooker or large pot and stir all ingredients together. 


Let simmer in pot or slow cooker for 3.5 - 4 hours. 


**Once the soup has been cooking for 2.5 hours, add 1/4 cup orzo.**
