Public Service Announcement! This is the best sandwich ever! Well maybe not ever, but it's damn tasty. I posted a toona sammie (also mega noms) on my blog a few posts back and I wanted to follow up with a chickin' salad sammie one. So this is what I came up with:
Ingredients for Chickin' Salad;
- 1/2 cup pinto beans
- 1 TBSP Vegan mayo
- 1 TBSP celery, diced small
- 1/2 TBSP white onion, finely diced
- 1/2 TBSP red cabbage, diced small
- 1 clove of garlic, minced
- 1/2 tsp of poultry seasoning (thyme, sage, marjoram, celery seeds & black pepper)
- Freshly squeezed lemon (I used approximately 1/8 of the lemon)
Instructions:
Smash pinto beans in a bowl with a fork. Once they are all smashed, add all other ingredients and mix together.
I piled it on on my usual Vegan bread; which is Stonemill Slow Crafted Honest Wellness bread in chia and Super-grains flavour. I toasted the bread and put 1 tsp of Vegan butter on it. You can choose to not toast your bread and/or omit the vegan butter. But, I can guarantee that however you make this sandwich it's going to taste delicious because this chickin' salad is da bomb. Unless you add weird ingredients like cinnamon and other spices alike, then I can guarantee that it won't taste good. If you're unsure, just stick to the recipe. Best advice ever!
Enjoy this sammie with a side of natural popcorn, Vegan chips, carrot & celery sticks or alone.
