How to make sure that you get all of your veggies in? Try veggie noodles, like these ones made from zucchini. There are also other options of vegetables that you can make into noodles, such as; raw sweet potatoes, carrots, beets and even fruits like apples. Any of these are perfect choices, just maybe with a different sauce. If you don't have a spiralizer they sell them already prepped at some grocery stores. Whatever option you choose is perfectly fine. A vegetable is a vegetable whether you prepare it yourself, or someone else does. Most times life gets busy and you just want to get stuff done sooner rather than later; however, a spiralizer is a good investment and fun to use! 😁
This was my first time eating zucchini noodles and it was delish. For the sauce I used;
- 1 avocado
- Juice of 2 limes
- 1 TBSP olive oil
- 1 clove of garlic
- 1/2 tsp cumin
- 1/4 tsp pepper
- Dash of salt
All of the above items go into a food processor to be blended into a smooth concoction. Add H20 or more fresh squeezed lime if needed.
Spiralize 2 - 3 zucchini's, depending on how big the zucchini is and/or how hungry you are. If you're making this for more than just yourself, you will probably need 4 - 5 zucchini's; I like a lot of vegetables! lol
Just go by a zucchini to zucchini, person to person basis.
Once zucchini is all spiralized, toss with avocado sauce and make it all fancy looking on a plate or in a bowl. Then top with diced tomato or your veggie(s)/herbs of choice. Hemp hearts would also be a good addition to this meal.
