Pulled J-Fruit with BBQ Sauce & Coleslaw


First time making pulled jackfruit and my very own BBQ sauce. I cheated a bit because I used canned jackfruit, but it turned out mighty tasty so the can did the trick just fine. As for the BBQ sauce, I came up with the recipe by looking at the ingredients in several different brands of BBQ sauce. I then put together a list of those ingredients based on what I had access to in my cupboards and came up with the following: 

Vegan BBQ Sauce; 
  • 1 can tomato paste, 156 ml can
  • 1/2 cup water 
  • 1/8 cup apple cider vinegar 
  • 1 TBSP molasses 
  • 1 TBSP maple syrup 
  • 1.5 TBSP coconut sugar 
  • 1/2 tsp celery salt 
  • 1/2 tsp onion powder 
  • 1/2 tsp garlic powder 
  • 1/2 tsp paprika 
**If making this for more than 2 people, the recipe can be doubled.**

Put all ingredients in a pot, stir everything together, bring to a simmer and let that continue on low heat with the lid on for 20 minutes. Stir occasionally. 

While the BBQ sauce is simmering get your jack fruit shredded by pulling it apart with your hands into shreds. I used a 400 ml can of jackfruit, so I can't give you any advice on how to cut the actual fruit. 

Add shredded jackfruit to the pot once the BBQ sauce is done simmering and mix everything together. You can either cook it for an additional 10 minutes on low on your stove, or you can put it on a baking sheet to cook for 20 minutes at 375 F. I cooked it on a silicone baking sheet that I put on top of the baking pan to avoid the jackfruit from sticking. You can also use parchment paper or aluminum foil.   


Coleslaw Recipe;
  • 1 large peeled carrot, shredded 
  • 2/3 cup of red cabbage, shredded 
  • 1/2 of a granny smith apple, shredded 
  • 3 TBSP Vegan mayo 
  • 1 TBSP apple cider vinegar 
  • Dash of salt & pepper 
Instructions;

Simple & easy. Mix it all together. 

To make your sandwich; toast your buns, pile on jackfruit and top with coleslaw.
