The weather is starting to get warmer, the days are getting longer and Spring is right around the corner. It's always a good time for nice cream; however, as the weather gets warmer (even only by a degree😏) this is the perfect breakfast, dessert or snack. The ingredients are wholesome, simple and nutritious. This is a no fuss recipe. Let's start with the ingredients layer by layer.
First layer - Chia Pudding:
- 6 ounces of canned coconut milk
- 1/8 cup of chia seeds
- 1/4 tsp of vanilla extract
In a mason jar, I use this for layering purposes; however, feel free to use a lidded bowl or Tupperware container. Measure out 1/8 TBSP of chia seeds and put into jar, bowl or container. In a measuring cup, measure out 6 ounces canned coconut milk and the 1/4 of tsp of vanilla to pour over chia seeds. Mix everything all together very thoroughly. The chia seeds should be distributed in the liquid evenly with none sticking to the side or bottom of the container. Put in fridge to sit overnight.
The next steps are to be prepared right before you eat it for optimal quality and freshness.
Second Layer - Banana Nice Cream:
- 2 frozen bananas sliced
Put into food processor and blend until smooth. Take out 1/3 of the mixture and form 2nd layer.
Third Layer - Banana & Strawberry Nice Cream:
- 3 frozen strawberries
Put into food processor and blend until smooth. Take out 1/2 of the mixture and form 3rd layer.
Forth Layer - Banana, Strawberry & Raspberry Nice Cream:
- 1/8 cup of frozen raspberries
Put into food processor and blend until smooth. The remaining is to form the top layer.
Option is to top with fresh fruit, shredded coconut or whatever else you think will taste delicious.
This makes 1 serving. If you want to make more, just multiply the ingredients by the # of persons you are making this for.
