Fluffy Blueberry Pancakes


Happy Pancake Tuesday!! Whether your celebrating this day by eating pancakes for breakfast, lunch, dinner or all three meals, plus snacks in between; I've got a recipe for you! Also, don't make the same mistake that I did. If you look at the pancake at the bottom of the stack it was flattened by force of habit. I have this tendency to flatten the pancake with my spatula. Do not do this! If you do, no big deal, but your pancakes won't be as fluffy as they could be.

The recipe is for 1 person; however, you can multiply the ingredients by the # of persons you are making this for. Recipe is, drumroll please!;

  • 1/2 cup of gluten free or regular white flour. I used gluten free as I did not have regular white flour available. 
  • 1 tsp baking soda 
  • 1 tsp coconut sugar
  • 1 tsp vanilla extract 
  • 1/2 cup of soy milk **I had this spelled out as SOYA for the longest time. Need to proofread more thorougly!** 😂😂
  • 1/4 cup of blueberries 
Place all dry ingredients in the bowl first, followed by wet ingredients and mix everything all together. Finally, fold the blueberries in. 

Put 1 tsp of Vegan butter in a frying pan to melt and then add batter. Make the pancakes as large as you would like them. Make sure that your stove is set at medium - low; don't have it set so high that it burns the surface of the pancake, because who wants a burnt pancake? I definitely don't, but with that said, everyone is different. Cook each side of the pancake for 2 - 3 minutes. Serve on plate with maple syrup and vegan butter. You can also top the pancakes with blueberries, hemp hearts and coconut whip. Yummm!!! 😋😋💚💚
