Chia pudding & nice cream? Umm yes, please! Where can I get some you ask? Well I'm not too sure about that; but! I can tell you how to make this perfect combo.
The bottom layer is the chia pudding which I put in the fridge overnight to solidify. It had;
- 1/2 package tofu dessert in mango flavour (see previous chia pudding post from awhile ago for picture of what this looks like).
- 2 TBSP canned coconut milk
- 3 TBSP of chia seeds
Instructions for the above are to blend the dessert tofu and coconut milk in a blender to form a liquid. Once liquid is formed, pour in a glass jar and stir in the chia seeds. Make sure to stir in chia seeds well enough to distribute them away from sticking to the bottom of the jar. They should be well distributed amongst the liquid. Put in the fridge until you are ready to eat for breakfast in the a.m., or whenever you have breakfast. lol
Now onto the nice cream. Yum yum. One of my favourite things to eat. Make sure that you freeze some banana slices the night before. Nice cream only works with frozen bananas. FYI - For this recipe I used banana slices from 2 large bananas.
Ingredients for middle layer, which also includes enough banana for top layer, are:
- 2 large frozen bananas
- 1 tsp of real vanilla extract or powder
- 1 TBSP baobab powder. If you do not have this, it can be made without it. But it does add some yummy tartness.
In a food processor or a really good, high quality, high powered blender blend banana slices on low until a smooth concoction has been created. It goes from chalky to a ball of frozen banana to a smooth concoction. Once you make this, that will all make sense. You will have to stop the machine and scrap the sides back into the mixture. Once everything is smooth add the vanilla, baobab powder and blend until all is mixed together. Then take half of the nice cream to form the second layer of your brekkie-fast.
Finally, the ingredients of the top layer are;
- Remaining banana mixture from the middle layer
- 1/4 cup frozen cherries
- 1 TBSP of acai juice. Just like the baobab powder, if you do not have that is perfectly fine. You can also use acai powder too.
Add frozen cherries and acai juice or powder to the food processor and blend until smooth to form the top layer of your breakfast. If you are using acai powder instead of liquid, please refer to the package for the serving size. I don't believe you'll need a full TBSP like the liquid, but I could be wrong.
Once everything is layered feel free to top with some walnuts, coconut or even a mint sprig.
