Chocolate Cupcakes with Cream Cheeze Frosting



Can't have a vanilla cupcake post without following up with a chocolate cupcake recipe! 

This recipe makes 12 mini cupcakes or 4 - 6 large/medium sized cupcakes. If you want to double up the recipe, just double, triple or quadruple the ingredients. 😜😜

Bowl 1 - Dry Ingredients: 
  • 1 cup cake/pastry flour
  • 1/2 cup white sugar 
  • 1 TBSP cacao or cocoa powder
  • 1 1/2 tsp baking powder 
Whisk all of the above ingredients in a big bowl so that all the powders are evenly distributed amongst one another. 

Sauce Pan - Wet Ingredients: 
  • 1/2  cup soy milk 
  • 1/4 of a cup vegan margarine 
  • 1/8 of a cup of mashed banana 
  • 1/8 of a cup of Vegan chocolate chips
  • 1 tsp vanilla extract
Put all of the above wet ingredients in a mini/small sauce pan to cook on low heat with the soul purpose of melting the margarine and chocolate chips. Once melted, pour into bowl with the dry ingredients and mix everything together. 

If you'd like, you can also fold in an additional 1/8 of a cup of chocolate chips. BONUS! 

Oven is to be set at 350 F


Place batter in your mini muffin or larger muffin tin. I used a non-stick one to avoid using cupcake liners. Less waste for the environment to deal with. 💚💙🌍

Bake for 12 minutes. Rotate pan halfway through cooking time. I made mini cupcakes; therefore, if you’re making larger ones bake for 20 - 24 minutes. 

While the cupcakes are cooking, you can get your yummy icing prepared. 

Chocolate Cream Cheeze Icing Ingredients: 
  • 1/2 cup icing sugar 
  • 1/8 cup of melted chocolate chips
  • 1 TBSP plain Vegan cream cheese 
  • 1 TBSP coconut milk 
  • 1/4 tsp vanilla extract 
FYI - if you made more batter, make sure to double up on the icing! 

Mix all of the above ingredients together with a fork or hand mixer on low speed. I used a fork and it worked just fine. 

Once cupcakes are done baking and fully cooled, place as much or as little of the icing on them as you’d like. 

Feel free to sprinkle shaved vegan chocolate (like I did), coconut milk powder or whatever else you think would taste good on top of the cupcakes.
