My Jordanian Hummus


The Prince of all hummuses; My Jordanian Hummus. I will never look at store bought hummus the same. Actually, I never did since I travelled to Jordan & Israel almost a year ago. One of the best tasting hummuses that I had was in Jordan and it had sumac in it, so almost one year later (procrastination is my middle name) I finally got to making my very own hummus. Hummus Ingredients: 

  • 2 cups cooked chickpeas 
  • 2 - 3 TBSP minced garlic or 3 - 4 cloves
  • 1/2 tsp baking soda 

  • 1 tsp of salt 
  • 1.5 lemons, just the juice. Freshly squeezed! 

  • 1 tsp ground sumac (I bought mine at the grocery store in the spice section).
  • 1/4 cup + 1/8 cup of tahini 

  • 1/4 cup + 1 tbsp ice cold water

Step 1:

  • Rinse chickpeas 
  • Place chickpeas in a large bowl with plenty of cold water for 6 - 8 hours 
  • Drain water 
  • Cook in medium to large pot with 3 - 4 garlic cloves and 1/4 tsp baking soda 
  • Cook for approximately 60 - 75 minutes. I cooked mine for 60 minutes. 
  • Rinse chickpeas after time expires 
  • Keep the garlic cloves as they go into the food processor 
  • Peel the skin off of each chickpea and discard the skin. 

Step 2:

  • Blend the chickpeas & garlic cloves in food processor.
  • As it's blending squeeze the lemon in a small bowl and mix with salt.
  • Gradually add the lemon and salt mixture to the food processor as the chickpeas are blending. It should be turned on while you're adding the lemon & salt mixture. 
  • Add the tahini and sumac. Blend until smooth. 
  • As the food processor is still on add 1/8 of a cup of really cold water until you've added all the water. 

Step Three: 

Serve topped with za'atar, olive oil, crushed garlic, roasted red peppers or whatever else you want.
