BBQ Jackfruit Pizza

There is nothing quite like a delicious pizza pie. Especially when the dough & BBQ sauce are both homemade. The amount that this recipe makes is enough for approximately 4 individual pizzas; however, you can make a full sized rectangular or circle pizza if you'd like.

Ingredients for the pizza crust;

In a small measuring cup put the following;

  • 1/2 tsp active yeast
  • 1 tsp coconut sugar
  • 1/2 cup of warm water

Stir all ingredients together and let sit for 10 minutes.

In a large bowl put the following ingredients;

  • 1.5  + 1/8 of a cup of white flour.
  • 1/2 tsp of salt

Make a well in the middle of the dry ingredients to pour the liquid mixture in. Mix all ingredients together and start to knead the dough for 4 - 5 minutes. Form the dough into a ball and cover with olive oil. Let it sit in bowl with a towel covering it for 30 minutes.

While the dough is sitting for 30 minutes, you can prepare the BBQ sauce.

Ingredients for BBQ sauce:

  • 1/2 cup of tomato paste
  • 1/2 cup of water
  • 1/8 cup molasses
  • 1/8 cup of apple cider vinegar
  • 1/8 cup of coconut sugar
  • 1 tsp garlic powder
  • 1 tsp of onion powder
  • 1 tsp celery salt
  • 1 tsp red chilli flakes

Combine all of the above ingredients in a pot and stir all together. Let it simmer on low heat with a lid for 15 minutes. Stir occasionally.

While the BBQ sauce is simmering, you can prepare the jackfruit. I used a 400 ml can of jackfruit in brine. I pulled apart each piece into shreds and set aside in a bowl.

Once the BBQ sauce is done simmering for 15 minutes, add the jackfruit and stir. Let simmer for another 5 - 10 minutes with occasional stirring.

At this point you can also set your oven to 450F.

By now the dough has most likely been sitting for 30 minutes. Clear a portion of your kitchen counter and sprinkle with flour for dough rolling purposes. FYI - the dough will not rise that much as there is little yeast used in this recipe.

Roll out dough to your liking and place on pizza stone or non-stick pizza pan. I rolled the dough to approximately 1 /2 cm thick. You can choose your own thickness though. The pizza pan that I use has mini holes in it, like this:

Pile BBQ jackfruit on dough and top with Vegan cheese shreds. I used Earth Balance Gourmet shreds in fiesta blend flavour.

Once oven is heated to 450, cook pizza for approximately 12 - 15 minutes. Check occasionally as it cooks quick!! Cooking time required will also depend on if you make a full size pizza, individual pizzas and/or also the thickness of the crust that you choose to use. A good indicator that I use to see if my pizza is cooked is if the dough underneath is a light brown all the way through to the centre. If it is, then it's most likely done.

Once it's done you can enjoy a slice or two or the whole thing! lol
