Apple Cinnamon Cookies


Apple cinnamon cookies are back on the blog and better than ever. The ones I previously posted were way too soft, even for a cookie. These ones are soft, yet crispy where they need to be. The perfect cookie in my opinion; but, it's best if you try them for yourselves. So, what are you waiting for? Give this recipe a bake! 😜

First step: Set oven to 350F. 

Second step is to put the following dry ingredients into a large bowl: 
  • 1.5 cups of enriched white flour
  • 1/2 cup of coconut sugar **see below**
  • 1 tsp cinnamon 
  • 1/2 tsp baking powder 
  • 1/2 tsp baking soda 

**I also made these cookies with white sugar and it tasted just as delicious. You can also use brown sugar as well. The white sugar brings out the apple flavor more, whereas the coconut sugar makes the cookie seem softer and more chewy; however, the flavor of the apple is less prominent. I also made the cookies with the coconut sugar larger and cooked them for 20 minutes as opposed to 18 minutes for the version with the white sugar. Therefore, the difference could be the size of the cookie that makes the apple flavor less prominent and the difference in texture, it might not necessarily be related to the type of sugar used in the recipe. This cookie has been quite the experiment. LOL**
Once all of the above ingredients are combined. Add the wet ingredients, which are; 
  • 1/4 cup of soy milk 
  • 1/8 cup olive oil 
  • 1/8 cup maple syrup 
  • 1 tsp of vanilla extract 

Mix all ingredients together and knead with hands until all items are evenly distributed through the dough. 

Take batter out of bowl and flatten to lay 1/2 a cup of diced apples onto the batter, like so:


Once the apples have been spread over the surface, form a ball and lightly knead to distribute the diced apples evenly throughout the batter. Once you feel as if they're distributed well, form a log and cut into 10 - 12 cookies. You'll be cutting width wise, not length wise. The width of each cookie should be no larger or significantly smaller than 1/2 an inch. Roll each individual cookie into a ball and lightly pat each one onto parchment paper or a silicone baking sheet resting on top of an actual baking sheet. Top with crushed walnuts and a sprinkling of coconut sugar. 

Bake for approximately 16 - 18 minutes. Rotate baking sheet halfway through cooking.

      These are pretty much muffookie's. They're really soft. The other one's I posted were soft, but the next day they got way too soft. I still have the recipe and can post it in the comments. Let me know and I'll get it to you.
