Walnut Cookies with Dried Cherries and Coconut


My logic for making these cookies is that I have 2 muffin recipes on my blog; so I might as well give some extra love to the Cookie Monster and feature a 2nd cookie recipe. These ones are made with chopped walnuts, dried cherries and shredded coconut. Holy yum balls!! 😋😋

First step is to pre-heat oven to 350 F. 

Next step is to put the dry ingredients in a bowl. They consist of; 

  • 1 cup of gluten free flour 
  • 1 1/2 cups of ground oats 
  • 1/2 cup almond flour
  • 1 cup of coconut sugar 
  • 1 tsp baking powder 
  • 1 tsp baking soda 


Once all of the above ingredients are combined. Add the wet ingredients, which are; 

  • 1/2 cup of soy milk 
  • 1/4 cup olive oil 
  • 1/4 cup maple syrup 
  • 2 tsp's of vanilla extract 


Other ingredients; 

  • 1/2 cup of chopped walnuts 
  • 1/2 cup of chopped dried cherries. Chop them to raisin sized pieces. 
  • 1/4 cup shredded coconut 


Mix all ingredients together with the walnuts, dried cherries and shredded coconut. Once all mixed together form equal sized balls and pat down lightly to form cookie shape. Put on parchment paper or silicone sheet and cook for 13 - 15 minutes. Just a side note - these cookies are pretty sticky, but super delicious nonetheless!

  2. Thanks so much! :) Just started the blog 3 weeks ago, so I'm getting there slowly but surely.
    And I, plus my co-workers can confirm that these cookies are delicious. I didn't really notice too much of the coconut, so leaving them out really wouldn't change the taste of the cookie.
