Tofu Chia Pudding with Banana Nice Cream





The perfect chia pudding consists of:
  • 1/2 pack of mango tofu dessert (see picture of product directly below). 
  • 2 TBSP of chia seeds 
If you are wanting to make two servings, use entire packet of tofu dessert and 1/4 cup of chia seeds.

Place mango tofu in blender until liquid consistency is formed. Once formed, place tofu in a jar and stir in chia seeds. Make sure that you stir it well or the chia seeds will rest at the bottom and it will not be evenly distributed. Let sit for approximately 1 hour. 

The banana nice cream consists of 1 chopped frozen banana in the food processor or a powerfully bladed blender on low and that is it. The nice cream will be done once the banana forms a smooth consistency. You will most likely have to stop the food processor or blender and scrap the goodness that has formed on the side back into the mixture. If you are wanting to make more servings, just add more frozen banana slices. Store in a sealed jar in the freezer until chia pudding is set. Then enjoy in a bowl topped with fresh fruit. I've experimented with several different chia pudding recipes and this one is my personal favorite. I hope you like it too!
