Cacao Waffles with banana's & PB

Awesome PB & banana cacao Vegan waffles topped with chia seeds

Recipe is: 
  • 1/2 cup Bob Mills Gluten Free Flour
  • 2 TBSP ground flaxseed 
  • 2 tsp's of cacao powder
  • 1 tsp coconut sugar
  • 1 tsp baking powder 
  • Pour 6 - 8 ounces of soy milk into the bowl with all the dry ingredients and mix until all combined together. Start with 6 and then add the other 2 TBSP's as needed. It shouldn't be too thick and it shouldn't be too runny. Hopefully that makes sense! 
For the flour, I used gluten free; however you can use whichever flour best suits your fancy. Also, you can choose to replace the flaxseed with almond meal. As for the soy milk, you can replace with any other milk alternative (coconut, almond, etc.). 

Prior to heating waffle maker either spray or rub coconut oil or avocado oil on surface to prevent the waffle base from sticking. It typically takes approximately 2 - 3 minutes to cook depending on how much batter you use. As each waffle is done, put on cooling rack until you're done cooking all the waffles.

Peanut Butter Sauce;

  • 2 TBSP peanut butter
  • 1/2 tsp coconut oil 
To melt the peanut butter, I used an old egg poaching pan that my sister gave to me that I never used until now; but if you do not have one of these, you can melt it in a bowl over hot water on medium to low heat on the stove. Just make sure that the bowl is the right size to put into the pot, it should fit perfectly in the hole and be sturdy with not too much wobbling.

For the banana slices, as you can see I put them between each waffle, but you can do whatever you'd like for decorative purposes. As for the PB, feel free to drizzle it where you want on the waffles or on top of the banana's. Then top it up with some chia seeds, I used approximately 2 tsp's. 

NOTE: This is a serving for 1 to 2 people. I also used a mini waffle maker; so, if you are using a bigger waffle maker or making this for more than 1 or 2 people, each serving size should be multiplied according to your cooking desires. Also, if you want to make more to store in freezer you can toast them up in the toaster oven once you're ready to eat them.
